Content modeling is the correct term. Typically content which is 
modeled is structured content.

We have been modeling content for more than a decade. There are no 
content modeling tools. We've even tried adapting tools like Rational 
Rose for content modeling and it doesn't work. The best tool we have 
found is Excel. We have standard way of representing content models.

I'd be happy to send you a copy of the presentation I gave in July at 
a conference. Our standard Excel layout is shown in this presentation.
