Customization is often mistaken for giving users options.

It is that, but, mostly, it's making it useful/usable.

I sometimes put this in my sig:

"People don't want to buy a quarter-inch drill.
They want a quarter-inch hole."

One way to make it useful/usable is to group options: advanced, minimal,
local, regional, etc, which allows people to switch on/off multiple/related
options with a single click. I'm positive that you'll find option twiddlers
are a small minority.
