I've never had a project where there wasn't some overlap with the graphic design and copywriting (or content strategy) disciplines. The deliverables tend to be a bit collaborative which is great because we bring expertise from different areas. I make a wireframe that proposes a layout and example text. The designer and copywriter use that as a framework for what they do, but aren't tied to it. We discuss and I usually end up adjusting the wireframe for a better layout and stronger copy. I don't add the specific graphical elements, but I like to make sure their position is noted correctly.
When we're working on something where the user will be interacting within a dynamic area of a single page (like a flash demo), I note where the dynamic area is and list the user requirements. The designer and I work together (with the copywriter) to ensure that the final experience looks right, feels right, and sounds right.

Absolutely.
Depending on whether you're talking ia, IA, taxonomy, UX, information design, or all of the above there are roles for just about everyone: from the Information Architecture of the sites themselves to diagrams depicting the overall interaction.
My current project has a traditional site IA component, a Social Media interaction component, a page level information design component, and an overall brand experience component. I've been writing strategy docs, creating sitemaps and content inventories, wireframing, and producing experience diagrams. Prior to my work, research-backed personas were created as well as an analysis of which Social Media tactics would be appropriate for those audiences.
There's room for al of us!
