Janet,
Like you we are in the middle of a redesign. We began by bench marking our
current state. Two very useful tools were Visio and Xenu. Visio has a tool
which will crawl your site giving you a very detailed map. You will need
human intervention because it shows everything, css, .jpg and all others.
Xenu (http://home.snafu.de/tilman/xenulink.html) was used to create a
content matix (inventory), it's very fast. You'll also need an analyst to
review the data.
As for how to project manage a web site redesign. Look into hiring a
project manager. It will be well worth your time. Call me if you want to
