If you're interested is that kind of browsing you might want to check
out a site that quite some time ago used it to organize (provide access
to) large quantities of scientific data.

It might take you a while to figure out how to use it. You need the Java
runtime environment. Essentially you search for something in one of the
databases then click on "MapIt". Fortunately you can find ample (though
not intuitively organized) information on the site about the research
that went into the project.

I agree with David Malouf, those navigations schemes are frequently used
for visual thesauri. Though I have also seen them for music such as
http://www.music-map.com/ (there's a much better one out there
somewhere) or merchandise.

Just out of idle curiosity, I'm sure this navigation technique has a
name by now - does anyone know what it is?

I dimly recall a company selling off-the-peg applets like this that you
could deploy on your site for your navigation. They called them
"navihedra" but I'm not getting any Google hits on that.
