Another interesting approach we used in our company is to select one web site
topic.  Then, split the students into groups and give each of them a different
persona, e.g. college student, elderly person, etc.  Each of the groups then
has to define their persona and design the architecture and GUI for the
website, based on their persona.  It is fun to see how the different designs
come out based on their target audience.
