They could try something called an ODBC proxy.

The ODBC proxy runs on the Unix box, the Coldfusion process connects to 
that and the proxy connects to the ODBC connection on the Access 
machine.

Presuming of course they they can't just connect to the Access machine 
directly via Coldfusion.
