I would recommend a card sort of 'academic subjects' with your students.
The site could be a .edu university catalog, a .org education site, or a
.com textbook site.
Everyone has at least a passing knowledge of all the subjects, but
enough diversity and flexibility remains to allow for discussion and
disagreement. I am responsible for my university's graduate catalog, so
I can say with some authority that people have a wide range of opinions
about how academic subjects should be organized.
Print a list of grad or undergrad programs from a couple universities if
you want some overlapping labels for things. Most major universities
have between 50 and 100 programs (at least in the US), which should keep
your students busy for an hour.
