One field and don't limit the character count to 10.
The benefits of 3 fields is that
1. the data is easier to validate (really, not much of an issue and any
programmer who makes this claim should be relegated to data entry for a
month)
2. a visual clue that an area code is needed
The benefits of 1 field:
1. The user is in control of the format of the number (some might see
this as a bad thing -- from a user's perspective I think it is a very
good thing)
2. Autocomplete in browsers (well my browser) likes the one field
option better
3. Faster for skilled and unskilled users
4. Better for international users
well, that's my 2 cents.
