Hi Sam,
I've been doing phone interviews for ages, generally by using the
phone's built-in speaker and a recorder. Pretty low-tech, but
effective. Right now, I'm using a Sony ICD-ST10 digital recorder
(about a hundred bucks). It makes fine electronic files and lets me
even add cueing marks so I can note when the respondent says
something particularly useful.
