I'm writing from Italy.
Unfortunately the IA field is not so developed and there aren't so many job 
opportunities. The fact is there aren't so many companies stricly focused on 
IA consulting.
You could try companies like:
- IconMediaLab, based in Milan and Rome
- Reply.it
- Kora.it
