I am saying that, because it depends on the user, and there is no one 
user to rule them all.

It's a wine site (I should have been more clear). Some users may be 
looking for french wines (say you're doing a thematic French evening), 
and only then want to decide red or white, others might want a red wine 
(say you're cooking meat), and only then want to decide which country 
it's from.

There is no one best solution within a simple hierarchy, because you 
have multiple *conflicting* needs. The only solution is to provide 
access that doesn't depend on a simple hierarchy, like multiple 
hierarchies, or faceted navigation.

So I was wondering if there was a name for this problem :)
