If I was setting up a new wiki, I would try Kwiki (www.kwiki.org).

It is reportedly easy and quick to get running. I haven't tried it,
but the word on the street is pretty good.

I tried UseMod long ago and can confirm that it was easy to get
running. I didn't like it in the long run, and switched to MoinMoin.

But lots of people swear by UseMod. Certainly one of the most
popular wiki tools.
