Hmm..

OK - I was assuming everything needed to be on one Unix box for some bizarre
reason ! 

This http://www.macromedia.com/support/coldfusion/ts/documents/tn17262.htm
technote suggests that you can connect to an ODBC source from Unix.

It also says that Coldfusion MX can communicate with databases that have a
JDBC 2.0 compliant driver. There are JDBC drivers for Access.
