You have five (5) inches of space between your eyes? How bizarre. But the
rest of the theory makes sense.

I'm not sure where I heard this, but I once heard that the optimum line
length was about the distance between a person's eyes (around five inches).
This meant a person could read a column of text with the least amount of
head and eye movement. This does make sense to me - I find content sites
that do this (like Salon) very easy to read.
Has anyone else come across this? If so I'd love to know where it came
from......

All the links eveyone has sent are really good sources. I'd also refer to
"The Yale Web Style Guide" ( http://info.med.yale.edu/caim/manual/ ), within
the Page Design chapter. The main consideration for width definition as
Patrick Lynch defines in this book/website (i have the printed version), is
optimal width for printing, which is something you should consider depending
on the purpose of your website.
