I have done gigs for non-profits where I have donated
part of the work. That way, I charge them what they
can afford and use the delta as a tax write off...

Don't underestimate clients. Even charging a flat fee,
they will figure out the hourly rate and then question
why you've changed it. Clients should be able to
affect the price in only one way: through the scope of
work. Want to pay less? Ask for less.
