I strongly suggest two classic books on the topics:

* Foucault, Order of Things: An Archaeology of the Human Sciences (at  
least the Preface)

* Lakoff, Women Fire and Dangerous Things (part 1-2)

All those sources are widely quoted and discussed in Bowker and Star,  
Sorting Things Out.
